    NO BAKE NUTELLA CHEESE CAKE

    NUTELLA (& CRUSHED Almond) CHEESECAKE

    I’m so excited to be sharing yet another cheesecake recipe with you guys! The feedback I received from my first one was absolutely incredible… So of course when I stumbled across this very naughty nutella cheesecake recipe I decided to make it and share with you the whole process of it all. And obviously I decided to bake in my Mickey Mouse onesie… and make a LOT of mess, haaaaa. ENJOY!

    PREP TIME | 20 Minutes

    REFRIGERATE TIME | Minimum of 4 hours

    INGREDIENTS

    DIGESTIVE BISCUITS | 280g

    UNSALTED BUTTER | 5 tablespoons 

    NUTELLA | 1 jar 

    HAZELNUTS (I used almonds instead) 3/4 cup

    CREAM CHEESE | 450g

    ICING SUGAR | 1/2 cup

    METHOD

    STEP 1 | Blitz the digestive biscuits in a food processor until completely crumbed (ha!)

    STEP 2 | Melt the butter (I did mine in the microwave) and add it to the crumbed biscuits. Mix until the consistency is like a damp-sandy mixture and press into your cheesecake tin using your hands or the back of a spoon. (I personally like to place some clingfilm across the bottom to make it easier to move around afterwards) Place it into the fridge to chill until later.

    STEP 3 | Onto the best part! Beat the cream cheese and icing sugar until smooth and then add in your jar of nutella to the mixture. Continue beating until fully combined.

    STEP 4 | Take the biscuit base out of the fridge and carefully smooth your nutella mixture over it. Crush your almonds or hazelnuts and you can either scatter them now or wait until its been left to set to decorate (which is personally my favourite!) Leave it to set (preferably overnight) and serve it straight from the fridge.

    TASTE TEST

    After making this the night before I managed to patiently wait the wholeeeee morning and early afternoon before tasting it with the rest of the family. We took it over to Jonny’s parents for Sunday Dinner dessert and it went down a TREAAAAAT. Everybody enjoyed it and there definitely weren’t any left for seconds… (top tip, make another one if you want it to last more than one day ha!)
